Banana Kiwi Muffins

Ingredients

  • 1 cup whole wheat flour
  • 2 teaspoon baking powder
  • half teaspoon salt
  • 1 ripe kiwi, peeled and chopped
  • 1 cup buttermilk
  • 3 tablespoons vegetable oil
  • 2 tablespoons orange juice
  • 1/4 cup mashed ripe bananas
  • 1 cup all-purpose flour
  • 2 medium to large eggs
  • 1 cup brown sugar
  • half teaspoon baking soda

Procedure

  • Combine wheat flour, all-purpose flour, baking powder, salt, baking soda, and sugar in a large bowl
  • Combine eggs, buttermilk, orange juice, bananas and vegetable oil in a separate bowl.
  • Combine the contents of each bowl and stir in kiwi.
  • Bake for 20 minutes
  • Cool muffins and enjoy
