California Party Sandwiches

Ingredients

  • 1/8 very ripe avocado. pared
  • 2 small pitted black olives, cut into quarters
  • 2 teaspoons margarine and mustard
  • 1 teaspoon lemon or lime juice
  • 1 tablespoon plus 1 1/2 teaspoons whipped cream cheese
  • 1/2  small garlic clove
  • 8slices thin-sliced party-style rye bread
  • 2 ounces shelled and deveined cooked medium shrimp, chilled
  • 4 cherry tomatoes, cut into quarters

Procedure

In blender container combine avocado, cream cheese, sour cream, onion, garlic and lemon juice and process until pureed, scraping down sides of container as necessary.

In small bowl combine margarine and mustard. Spread 1/8 of mixture on each slice of bread, then top each with 1 lettuce leaf and 1/4 ounce shrimp. Using a pastry bag fitted with a star tip, or a spoon, top each sandwich with 1/8 of the avocado mixture. Decoratively arrange 2 tomato quarters and 1 live quarter on each sandwich. Transfer sandwiches to serving platter; cover with plastic wrap and refrigerate for at least 30 minutes.
