Chicken Breast and Mushrooms Recipe
Ingredients:
- 1/3 cup oil
- 4 chicken breasts, fillet
- 2 tsp salt
- 1/2 tsp black pepper
- 1 cup fresh button mushrooms, sliced
- 1 (6 oz) can Carnation Evap
- 1 small onion, thinly sliced
- 4 potatoes, sliced
- 1 sprig parsley
Procedure:
- Preheat oven to 325F.
- Heat oil in large skillet and brown chicken until skin is golden, reserve oil in pan.
- Transfer to a baking dish.
- Sprinkle chicken with 1 teaspoon salt and 1/4 teaspoon pepper.
- Saute mushrooms in oil that chicken was browned. Remove mushrooms from pan with slotted spoon, still reserving oil in pan.
- Spoon mushrooms over chicken.
- Cover chicken and bake 30 minutes.
- Remove chicken from oven and pour Carnation Evap over chicken and mushrooms. Return to oven and bake an additional 30 minutes.
- While chicken is cooking, saute onions in oil until clear.
- Add potatoes and fry until tender. Sprinkle with remaining teaspoon of salt and 1/4 teaspoon of pepper.
- Garnish with parsle.

I love to get a pair of chickens at the same time, remove and throw out the skin after which pick the bones thoroughly clean of meat breaking it into small shreds or perhaps pieces. Normally, I’m going to nibble on the chicken whilst I’m repeating this but I don’t really feel guilt ridden, just comforted! My mom makes a beautiful looking salad everyday for dinner. then she serves grilled chicken with corn on the cob, its SO yummy, and normally done pretty quick!!!
