Chicken Stew Recipe

Ingredients:

  • 3 tbsp butter
  • 1 whole chicken, cut into 8 pieces
  • 1 piece white onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1 tbsp garlic, chopped
  • 1/4 cup all purpose flour
  • 1 tbsp tomato paste
  • 1/2 cup red wine
  • 1 can Carnation Evap
  • 3 cups chicken stock
  • 2 cups fresh button mushrooms, halved
  • 2 potatoes, peeled and cubed
  • 1 large carrot, chunks
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/8 tsp dried oregano
  • 1/2 tsp dried tarragon
  • 2 tbsp chopped fresh parsley

Procedures:

  1. Season chicken with salt and pepper and brown it in butter. Set aside.
  2. Using the same pan, saute onions, celery and carrots until caramelized. Then add the garlic.
  3. Add the all purpose flour and tomato paste.
  4. Deglaze with red wine and add in Carnation Evap and chicken stock, oregano and tarragon.
  5. Return chicken to the pan and cook for 30 minutes.
  6. Add potatoes, carrots and mushrooms and season with salt and pepper. Let simmer until vegetables are tender.
  7. Add in parsley and let simmer for another 2 minutes. Serve.
