Chicken Stew Recipe
Ingredients:
- 3 tbsp butter
- 1 whole chicken, cut into 8 pieces
- 1 piece white onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrots, finely chopped
- 1 tbsp garlic, chopped
- 1/4 cup all purpose flour
- 1 tbsp tomato paste
- 1/2 cup red wine
- 1 can Carnation Evap
- 3 cups chicken stock
- 2 cups fresh button mushrooms, halved
- 2 potatoes, peeled and cubed
- 1 large carrot, chunks
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp dried oregano
- 1/2 tsp dried tarragon
- 2 tbsp chopped fresh parsley
Procedures:
- Season chicken with salt and pepper and brown it in butter. Set aside.
- Using the same pan, saute onions, celery and carrots until caramelized. Then add the garlic.
- Add the all purpose flour and tomato paste.
- Deglaze with red wine and add in Carnation Evap and chicken stock, oregano and tarragon.
- Return chicken to the pan and cook for 30 minutes.
- Add potatoes, carrots and mushrooms and season with salt and pepper. Let simmer until vegetables are tender.
- Add in parsley and let simmer for another 2 minutes. Serve.
