Green Rice Recipe

Ingredients

  • 1 medium green bell pepper
  • 1/2 cup canned ready-to-serve chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/2 medium canned jalapeno pepper, seeded and chopped
  • 1/2 garlic clove, chopped
  • 1/4 teaspoon salt
  • ground pepper
  • 2 teaspoons olive oil
  • 2 ounces uncooked regular long grain-rice

Procedure

Preheat broiler, On baking sheet line with heavy-duty foil broil bell pepper 3 inches from heat source, turning frequently, until charred on all sides; let stand until cool enough to handle, 15 to 20 minutes. Peel pepper to blender container; add broth, parsley, onion, jalapeno pepper, and seasonings and process at high speed until pureed.

In small saucepan heat oil over medium-heat; add rice and cook, stirring constantly, until rice is coated with oil, about 2 minutes. Add pureed pepper mixture and stir to combine. Reduce heat to lowest possible setting, cover pan, and cook until liquid is absorbed and rice is tender, about 15 minutes.
