Lamb Curry Recipe

Ingredients:

1/2 cup button onions
1 tbsp butter
1/4 cup veggie oil
1/2 tsp turmeric
1 Bay leaf
5 pcs. of Cloves
2 Cinnamon sticks
4 Red chilies
5 pcs. of Cardamom
100g onion, chopped
2 tbsp ginger paste
2 tbsp garlic paste
150g tomato, skinned, seeded and chopped
1/2 kg lamb, cubed
1 1/4 tsp garammasala
1 tsp ground coriander
1/2 tsp cumin
1/2 tsp nutmeg
1 tsp black peppercorns, crushed
1/2 tsp cilantro, chopped
1/2 tsp ginger, julienned
2 cups water
1 cup Carnation Evap
Salt

Procedure:

Boil water in a saucepan and blanch the button onions. Drain.
In another pan, melt the butter, add the onions. Remove from heat and set aside.
Heat oil in a pan, add the turmeric, ground spices and whole spices. Cook on medium heat until fragrant. Add the onions and cook until brown. Add the lamb, ginger and garlic paste. Add the chopped tomatoes. Stir and cook.
Add the water and Carnation Evap. Let simmer and cook for 20 minutes. Reduce heat and cook for another hour until lamb is tender.
Season with salt and pepper. Add the button onions. Stir and cover for a few minutes.
Garnish with cilantro and ginger.
