Menudo Recipe

Cooking Information:

  • Estimated Time: 30 minutes

Ingredients

  • 1/2 kilo pork, cut into small chunks
  • 1/4 kilo pork liver, cubed
  • 5 pieces chorizo de bilbao (optional)
  • 4 potatoes, cubed
  • 4 carrots, cubed
  • 1 green and 1 red bell pepper, diced
  • 1 cup chickpeas (garbanzo)
  • 1/4 cup raisins
  • cooking oil
  • fish sauce (patis) to taste
  • 1 small head of garlic, minced
  • 1 medium size onion, diced
  • 500ml tomato sauce

Procedure:

  1. In a pan, heat cooking oil. Fried the potatoes and set aside.
  2. Sauté garlic and onion. Add the pork, liver, chorizo de bilbao, bell pepper, carrots and fish sauce to taste.
  3. Add water and tomato sauce, then simmer for 20 minutes or until the pork is tender.
  4. Add the chickpeas (garbanzo), potatoes and raisins and wait until boil for another 2 minutes.
  5. Adjust seasoning with fish sauce then serve.
